Jennifer Pohlenz is the current manager of Finca La Chilana in El Triunfo in the Sierra Madre Occidental in Chiapas Mexico. Her family has been in coffee for over a century and they have been managing this current farm since 1978. They are deeply committed to taking care of the environment and growing coffee in a sustainable way.
The coffee is meticulously selected by hand at just the right maturation point. Subsequently processed using environment friendly technology and slowly sun-dried in our courtyards. After which they are stored for careful selection of only those beans boasting superior aroma, body, acidity, and flavor.
